Ingredients: 1-2g ceremonial matcha • 30ml hot water (80°C) • 150ml milk (oat, almond, or whole) • Sweetener to taste (honey, agave syrup)
Preparation: Sift matcha into a bowl. Add hot water and whisk with a chasen in a "W" motion until a fine foam forms. Heat and froth the milk. Pour matcha into a mug, then add the frothed milk on top. Sweeten to your taste.
💡 Tip: For an Iced Matcha Latte, prepare the matcha the same way, then pour it over a large glass filled with ice and top with cold milk.
Green Energy Matcha Smoothie
Ingredients: 1g matcha • 1 frozen banana • 100ml almond milk • 1 tbsp peanut butter • 1 handful fresh spinach • 1 tsp honey
Preparation: Dissolve the matcha in 30ml of lukewarm milk to avoid lumps. Place all ingredients in a blender and blend for 30-45 seconds until smooth. Serve immediately.

Comforting Hojicha Latte
Ingredients: 2g hojicha powder • 20ml hot water (90°C) • 150ml oat milk • 1 tsp cane sugar or brown sugar
Preparation: Sift hojicha into a bowl. Pour hot water and whisk vigorously. Heat and froth the milk. Pour hojicha into a mug, add the frothed milk, and sweeten. Sprinkle with a pinch of cinnamon if desired.
💡 Tip: For an Iced Hojicha Latte with brown sugar, melt 1 tbsp brown sugar into the hot hojicha, then pour over ice and cold milk. The result is addictive.
Hojicha Chai
Ingredients: 3g hojicha leaves • 200ml milk • 1 cinnamon stick • 2 cardamom pods • 1 slice fresh ginger • 1 tsp honey
Preparation: Heat the milk with spices over low heat for 3 minutes. Add hojicha leaves, let steep for 2 minutes off the heat. Strain, sweeten with honey, and enjoy.

Matcha Tiramisu
Ingredients: 250g mascarpone • 2 eggs • 50g sugar • 200ml hot water + 2g matcha (for the syrup) • Ladyfingers • Matcha powder for dusting
Preparation: Separate egg whites from yolks. Whisk yolks with sugar, then fold in mascarpone. Beat egg whites until stiff peaks form and gently incorporate them. Prepare the syrup by dissolving matcha in hot water. Briefly dip ladyfingers in the syrup. Layer: ladyfingers, cream, ladyfingers, cream. Refrigerate for at least 4 hours. Dust with matcha before serving.
Matcha & Coconut Energy Balls
Ingredients: 100g rolled oats • 80g almond butter • 2 tbsp honey • 2 tsp culinary matcha • 30g shredded coconut • 30g white chocolate chips
Preparation: Mix all ingredients in a bowl. Form into walnut-sized balls. Roll them in shredded coconut. Refrigerate for 30 minutes. Stores for 5 days in the refrigerator.
🍮 Hojicha Desserts
Hojicha Panna Cotta
Ingredients: 300ml liquid cream • 100ml milk • 3g hojicha powder • 40g sugar • 2 gelatine leaves (or 1 tsp agar-agar)
Preparation: Soften gelatin in cold water. Heat cream and milk with sugar. Off the heat, whisk hojicha into the mixture. Add the squeezed gelatin and mix well. Pour into ramekins and refrigerate for at least 4 hours. Serve with a drizzle of caramel or chopped hazelnuts.
Hojicha Madeleines
Ingredients: 2 eggs • 80g sugar • 100g flour • 3g hojicha powder • 80g melted butter • 1/2 sachet baking powder • 1 pinch of salt
Preparation: Whisk eggs and sugar until pale. Add sifted flour, hojicha, and baking powder. Fold in melted butter. Refrigerate the batter for 1 hour. Pour into a buttered madeleine mold. Bake at 220°C for 5 minutes, then reduce to 180°C for 5-7 minutes. Madeleines should be golden with a nice hump.
