Matcha latte: which milk to choose to best bring out the taste of matcha?
Milk profoundly changes the taste of a matcha latte. Fat, sweetness and the milk's own flavour can round out the tea, improve texture or hide some of its vegetal and umami notes.
Whole milk, oat, soy, almond and coconut can all work, but they produce very different results.
Why does milk matter so much?
In a latte, there is usually much more milk than water, so milk becomes one of the dominant ingredients. Three factors matter most: fat, sweetness and the milk's own flavour.
Whole milk: round and creamy
Whole milk adds body and softens perceived bitterness. It is a strong choice for a creamy, relatively neutral latte.
Oat milk: sweet and indulgent
Barista oat milks are popular for their creamy texture. Some are already quite sweet, so taste the latte before adding syrup.
Soy milk: lets more tea through
Soy often has less sweetness than many oat drinks and can keep the matcha more noticeable while still giving a rounded texture.
Almond milk: more aromatic
Almond adds nutty notes and is less neutral. A strongly flavoured almond drink can dominate delicate matcha.
What about coconut?
Coconut can work particularly well in iced drinks but strongly changes the flavour profile. It is more of a creative choice than a neutral base.
Quick comparison
| Milk | Texture | Sweetness | Effect |
|---|---|---|---|
| Whole | Very creamy | Moderate | Rounds the tea |
| Oat | Creamy | Often high | Indulgent; can hide delicate tea |
| Soy | Balanced | Low to moderate | Often keeps tea more visible |
| Almond | Lighter | Variable | Adds nutty notes |
| Coconut | Variable | Variable | Strongly changes the profile |
Matcha latte proportions
Start with 2–2.5 g matcha, 30–40 ml water and 150–180 ml milk. If the drink tastes mostly of milk, reduce milk slightly before increasing matcha dramatically.
How to keep the matcha visible
- Use sufficiently aromatic matcha.
- Prepare a small water-based concentrate first.
- Sift the powder.
- Avoid overly sweet milk if you want to taste the tea.
- Taste before adding syrup.
Maison Yume's Yame Matcha is selected to remain aromatic in milk while staying smooth and low in bitterness.
Hot or iced?
The same milks can be used, but cold and melting ice reduce flavour intensity. An iced recipe may need slightly less milk or a small dose adjustment.
Which milk to use when testing a new matcha?
Taste the matcha with water first, then make a latte with a relatively neutral, unsweetened milk. This helps separate the tea's real profile from the milk's contribution.
